Short summary (English)

One part of our research is focused on nutrition assessment and evaluation of quality of nutrition as well as determining dietary habits of people with celiac disease who are adhering gluten free diet. Quality of nutrition is evaluated by using different dietetic methods such as 24-hours dietary record, food records and food frequency questionnaires. These dates are processes by using food composition tables. Another part of our research is focused on food composition determination using spectrophotometric methods, food microscopy, protein nutritive quality, sources of different dietary lipids and lipoprotein metabolism as well as adverse effects of over consumption of cholesterol and fat on body weight and health.

Jedan dio našeg istraživanja usmjeren je na procjenu kvalitete prehrane, nutritivnog statusa i prehrambenih navika osoba s celijakijom na bezglutenskoj prehrani. Procjena kvalitete prehrane utvrđuje se dijetetičkim metodama poput dnevnika prehrane, 24-satnog prisjećanja te validiranih upitnika za procjenu hrane i pića, a podaci se obrađuju uz pomoć tablica s kemijskim sastavom hrane i pića. Drugi dio našeg istraživanja usmjeren je na određivanje kvalitete hrane uz pomoć spektrofotometrijskih metoda, mikroskopiranjem, određivanje kvalitete proteina, izvorima prehrambenih lipida i metabolizmom lipoproteina. Također utvrđujemo nepovoljan učinak prekomjernog unosa kolesterola i lipida na tjelesnu masu i zdravlje.
